SIAP but I made some Bacon Jam today and fuck me running its good. I used this recipe (http://tastykitchen.com/blog/2012/07/bacon-jam-ooh-mommy/) to make this: http://i.imgur.com/iongV.jpg

Shit slams......hard. Smokey, salty, sweet, and most importantly spreadable. We are putting some in a pasta tonight and on toast in the morning with an egg. Make it.

Breakfast of those wanting to be on cholesterol medication. Toast, bacon jam, couple of fried eggs fried in bacon fat, and Picamas green hot sauce.

made this today with the OPs recipe. too much sweet, not enough savory. also, if you're gonna do it, brown the shit out of the bacon. mine still had fat to be rendered and prevented the jam from thickening on the simmer.

BRC in Houston has a fantastic Bacon Jam as well, but I'm gonna try OP's recipe this weekend.

I've got the delicious bacon-onion-garlic concoction reducing on the stove. We were able to salvage two jars of bacon grease to save for later, and I noticed this interesting phenomenon - The bacon grease is layering! Any baconologists know what's going on here?
