    ERhine's making a Tiffany Cake (& Gumbo)

    Decided to make a Tiffany Cake. Had a Tiffany pastry at Sucre in New Orleans back in December.





    Start out by making a raspberry puree:


    Heat 1 cup puree, butter, and bittersweet chocolate in a double boiler until melted:



    Stir in flour and then pour into a spring-form pan & bake for 10 minutes:


    Let it cool while you prepare the Raspberry gelee.

    Heat 1 cup of the puree with lemon juice, sugar and vanilla paste:



    Add in gelatine and pour over cake layer:


    Freeze until set:


    Raspberry Mousse:
    Heat 1 cup raspberry puree with egg yolks and sugar:


    Add in bloomed gelatin:


    Fold into whipped heavy cream:


    Pour over gelee layer:


    Freeze until set.

    Not sure what you mean. It's just raspberries that you process in the food processor.

    Chocolate Mousse:
    Heat cream and light corn syrup until boiling:


    Add in chocolate and stir:



    Fold into Whipped Heavy cream and Pour over frozen mousse layer:


    Freeze:


    Remove from freezer, remove from spring-form and invert:

    did u strain the seeds from the raspberries after you pureed them? those $#@!ers can get annoying while eating a raspberry dessert. looks great btw. u got a recipe for the gumbo?

    Left them in the gelee, strained out of the mousse.

    Gumbo recipe is just a modified version of Mr. B's gumbo yaya.
