I started a thread about this a while back, but can't find it and there were some good suggestions. I was going to do this for Christmas, but I didn't end up visiting my folks, who I was going to do it for.
Now I'm back visiting them and told my old man to pick up a prime rib to smoke tomorrow. He got an 8 pound, boneless ribeye roast. I thought bone in would be better, but it's done, so that's what I'm working with.
I'm thinking just some salt and pepper, charcoal and apple wood, smoking it around 225 to an internal temp of around 125.
Let it sit out about an hour before and let it rest about 30 minutes after I pull it? Anything I'm missing that needs to be done? Would rubbing it down tonight make any difference? Doing it on a WSM, by the way.
