Seriously. I celebrated the previous place on Manor road -- was a regular customer, and a pain in the ass about asking for "outside cuts" on my brisket. And again, was a big fan of the days that a big beef short rib was the special. It was the best bbq joint in town. I have high hopes for this incarnation. If I'm not there opening day, will be there soon after.
This sounds like the perfect way to get rid of the hipsters at Franklin. Just start hinting that there is a new BBQ place that no one has ever heard of opening up. Make it seem like eating at Franklin as akin to listening to Coldplay.

I don't know, I think there's something charming about being a food nazi. Since the G/M Steakhouse on the Drag closed down, there just aren't enough good places in Austin to get some righteous customer abuse anymore. Plenty of bad service, but very little downright abuse. I miss it sometimes.
Regardless, I'm very much looking forward to eating at your new place.
I don't remember getting any abuse on Manor, but maybe I just picked days John wasn't there.

Can we wait a few weeks until we tell the $#@!ing standing in line at 10 am crowd that John is going to be up and running. I never minded standing in line, even outside the door for a bit, at John's old place on Manor, but the damn two hour minimum line at Franklin's is just unbearable.
That's what I'm talking about. I remember waiting outside the door at the Manor road place, sometimes for 10-15 minutes. A long wait from arriving to eating was like 25 minutes. That's doable. Having to get to Franklin before 10:00 so I can get food by 11:45? No thanks. I just can't do that. I mentioned it somewhere else here on GM or maybe over @ the old joint, but when my daughter was born I managed to get out the next day & go to JM's shop on Manor.
After being served, I realized I had left my wallet & coinage back @ the hospital. John took pity on me & said to come back another day with the $$.
I did get back over about a week later & get square. IMO, that is awesome customer service vs. being gruff.
I just want to say posting as shoeless joe is cool enough to make me try out your stuff. Posting in and of itself shows you have balls, and that is good enough. I'll be a patron of your place, at least once.
Both my kids were born at St Davids. I'm pretty sure it was for my boy's birth 8 yrs ago, I had John Meuller's brought up to the hospital. We'd been there a day or so, not much sleep, and lousy grub. My buddy was coming to visit, and asked if we needed anything. I told him hell yeah, bring us some John Meuller's cue. When he got there with a box fulla brisket and ribs, we were some happy campers. Made the hospital stay tolerable.
And today, that boy is a BBQ fiend. Good memory I'd forgotten till I read your story. Really looking forward to having some of John's cue again.

the first time we went to mueller's on manor rd we were still in college- my future wife, myself, her roommate, and her future husband. it was an early sat afternoon, like 1:15 and there weren't many people. john you sat and talked to us for like 20 minutes after our meal was done- i forget what we were talking about, but it left an indelible impression.
Thanks everyone... time is short.. Making a batch of hot sausage and a batch of pork sausage tomorrow. A good way to start breaking in a new pit!!!
I have always made my own.. sorry it will be more in a Louie Mueller style I guess. But yes it is coarse and i still use salted hog casings no synthetics
The last time we went to Mueller's, it was a late Saturday afternoon and they insisted we take home a half dozen Round Rock donuts as we were leaving "so they wouldn't go to waste". That was a good day.

I was there. JMueller was one of our first stops. Sausage was awesome. It was hot as $#@! out there.
