Given that Phil's advertises every week in the HP, that seems like a classic softball interview for damage control purposes. They are trying to get the word out that their shitty bbq is caused by unseasoned pits that have now been seasoned? Good luck with that.

Sounds like Phil's needs to read the writing on the wall and quit with the crappy BBQ. Apparently he does a decent burger and good side dishes, he should stick with that.
it is really no wonder the bbq is void of smoky flavor. you drive by the place, and never see any smoke. I think they probably just have a gas oven that they perhaps throw on a couple of sticks of hickory, and hope for the best.
Is it against the law in Houston for a restaurant to have actual smokers?

Phil's hickory-smoked barbecue seemed weary and devoid of character each time I sampled it, victim of too much sitting around waiting to be sliced or cut. I don't think I've ever experienced drier brisket in this town - including an order sliced from the presumptively moister fatty side. The smoke ring on the beef was as puny as the smoky flavor. Sliced, the beef was a two-time disaster. Only chopped into cubes and piled on a sandwich did it seem palatable, and then only in a pleasant, pot-roasty mode.
Finally checked this thread out. BBQ looks terrible.
That marinara bbq sauce looks somewhat similar to a sauce different people in my family have made since at least the 1930s. I know for sure my aunt makes something similar, but I never had it. They had a lot of bbqs back in the 60s when the family was bigger and younger. They'd smoke entire goats, or another uncle would rig an old deep freezer as a smoke pit and they'd cook briskets. My dad said his sister's sauce was red and thick like the stuff in mycox's pics. He said it was so spicy that he couldn't feel his lips after a few bites.
It's not my style of sauce. Just saying it isn't yankee or anything, and actually has some Texas roots. But I'm doubting this place's ragu has any spice to it at all. Looks disgusting.
I just heard a rumor that Phil's has closed. I stopped by for a beer a couple off weeks ago and there were four people in the joint.
Sucks for the people who were not able to enjoy the best ribs in town.
In other news, I ate at Waller Line BBQ yesterday. It sucked so bad I couldn't help thinking "I bet Phil's is better than this crap."
What an expensive waste of time.
