    I have FINALLY found good barbecue in Bell County

    As some may recall, I posted the follwing thread about a well-reviewed/known place called Shoepf's in Belton. This is a picture of their Texas Monthly Top 50 pot roast...err....brisket:

    Today, I noticed that a taxiderminst, deer processor, sausage maker was now serving lunch. Their brisket:



    Very good moist brisket with flavorful bark and good smoke flavor. The pulled pork was good, but I'm not a huge pulled pork fan. They only do ribs on Fridays, which I'll be trying soon.

    So the next tome someone says "If you're on I35 and need a good bite to eat, stop at SCHOEPFS!" Tell them that you don't like gray ugly pot roast and go to Miller's Smokehouse instead.

    I do believe that they are only open for lunch right now. Oh, his pits are pretty damn impressive, too. I spoke to the owner and he takes his stuff real seriously.

    * They had something called "fire in a bowl" on the menu which I believe is a bowl of pulled pork, sausage, brisket, sauce, japs and cheese. I want to try that as well some day.

    Very good cue'. I heard the ribs are great but I have not made it over for lunch yet. You should also try Mungias in Heidenhammer. Only open on Friday and Saturday nights, family style all you can eat.

    looks tasty.

    although, i've had shoepf's several times, and it has never looked liked, nor tasted like what you've described. so, perhaps it is hit or miss, much like cooper's. i wouldn't flat rule it out though, because i've had some fantastic barbeque at shoepf's in the recent past.

    I've been to Schoepf's about 10 times in the last two years and it is always $#@!ty like that picture. If that's hit or miss, so be it, but I think it's a trend. I am hypothesizing that they (Schoepf's) are wrapping in foil for the entire cook to keep it moist. I feel they may be doing that because they may be cooking it at a higher temp because they are lazy and don't want to do it right.

    Im back today for ribs. Owner gave me a chicken leg to sample. I NEVER order chicken, but this yard bird is really damn good. I'm going to snap a pic of my ribs and comment after lunch.

    Wow. If he did ribs every day, I'd be in trouble. His ribs are awesome. In all honesty, I view the ribs and brisket the same as I do Frankin's, which is to mean that they're awesome. In fact, I prefer these rib's to Franklin's. The pork flavor seems to really come through a bit more. The brisket is sooo similar. Not trying to start a barbecue war, since they are so far apart, they're not competing for the same customers. Just trying to let y'all know how good I think this place is. I'm bringing some other Shagsters soon to make sure that I'm not just crazy or something.



    Oh, any idea on how one would get Texas Monthly to review a place like this? I'm pretty damn confident that Miller's would dominate in a comparison with Schoepf's. Schoepf's is pretty much printing $ over there since that article, and Miller's really deserves that for the superior product he puts out.

    Their hours are 10:30-2:30, M-F, by the way. If anyone's ever planning on stopping in, PM me and I'll meet you over there.

    Has something happened to Maurice's Real Pit BBQ in Harker Heights? I know scottsins isn't fond of it, but in my opinion it is as good as it gets. And I've been to Lockhart and Luling.

    I went by yesterday (for some reason, I thought Scott had said Schoepf's was good. Not sure where that came from, but a text back & forth got me set straight on where to go).

    Overall, I'd rate it about 7 on a 10 scale (I told Scott it hit an 8.5, but have to refresh that). They don't do ribs (pork) on any day but Friday (WTF is up with that??) & were out of the hot links. He does his own mix & stuffs his own sausage; I was only able to get the German.

    I asked for "not too moist, not too lean" on the brisket. Bark was actually not too "barky" in a crusty kind of way because most of the bark I got was on the fatty side of the meat. About 1/2 the cuts were a tad on the dry side (see pics). Overall it had a decent smoky flavor that was reasonably well penetrated into the meat.

    The sausage was OK but kinda flavorless & I'm not really sure what to make of that.

    Even though I've only been this one time, I can't completely say it was an off day for them as Scott had been there about 30 minutes or so prior to me.



    I'm willing to give it another shot if I'm in the area.















    This last picture doesn't really show it, but the sausage was actually kinda gray in color. I'm still trying to sort out the sausage taste thing & can't figure that out (didn't ask him about it as I didn't have time).

    He also does his own Pemmican & that was good to nibble on; decently spicy but not too heavy.

    I did try the sauce (mostly on the bread but a small shot here & there on the meat products) & it was generically sweet. Nothing to write home about, but I don't think it was a Sysco product.

    I don't do most beans, so the two sides were 'regular' mustard type potato salad & more of a German potato salad. Both were adequate; the mustard was a slight bit runny & not too noticeable on the mustard flavor. As stated by me on prior threads, it's not about the sides (unless they are amazing).

    Overall on the whole joint, it's a step above Rudy's but not quite Louie Mueller's or even remotely close to Franklin's.
    I didn't ask, but I doubt he is hand selecting his brisket like Aaron is.

    Shoepfs used to have a place in Killeen before it got burnt down by a disgruntled employee. I thought the brisket there was pretty good in flavor, but I dont recall much in the way of bark. I will have to seek out this Miller's place.

    Good write up. The pics def make it look dry, but not too dry. I have to remember you didnt order moist. Gonna have to hit this place up as its not too far away.

    I only order the moist, and it was great yesterday. had the ribs today and they were as good as I've had anywhere. I'm not partial to the german
    regular" sausage at all. The hot links are damn good, IMO. Sorry they were out.

    They only do ribs on Fridays because he's still building his business up. It's tough going with an alleged "TM Top 50 1/2 mile away, even though Miler's product blows that place away. The bark isn't ever really crisp, but that's not a big deal to me as long as the crust tastes right, which it always does to me.

    I care about moistness and flavor. Those two attributes are always dead on whenever I go. Anyone who wants to give it a shot with me, just let me know. I can make lunch there about any day of the week.

    Oh, and I'd eat cue at Miller's every f'ing day over Mueller's. That's crazy talk to me, but I'm basing that off my fatty brisket experiences at both places.

    & Remember,
    I asked for "not too moist, not too lean" on the brisket.
    I've had Franklin "lean" that had me thinking they flat out lied on what was lean vs. fatty, but then you're able to stand right in front of the cutter & can obviously tell where it's coming from on the whole brisket, especially if it's being unwrapped for the 1st time off the smoke. I do think that a lot of this comes from Aaron hand selecting his cuts.

    Anyhow.

    I'm willing to give it another go.

    Fujifilm FinePix s700; 7.1mpx, 10x Optical Zoom (not quite an SLR, but it gets some decent long range pics).

    I seem to have this habit of remembering the Macro & SuperMacro button from time to time & I guess that helps.

    The two pics that are nearly identical were done with the "Natural / Flash" setting; two rapid images, the 1st with flash & the 2nd without. I had this left on from taking pics of my boy on the park swings & was actually the 1st pic I took @ Miller's.

    There are a LOT of settings on this camera that I have very little knowledge on how to use. If I were to get a quality digital that was a true SLR, I don't know if I could actually handle the unit properly.

    Anyhow. I'd hit this place up again (especially on a Friday) just to see i fit can get any better, but I'm not sure what's easier; a trip here or getting to 34th & I 35 by 10:45a.
