On the star shot... It's more about how good your camera is at noise reduction at high ISO than it is full frame vs crop, though the extra stop of light obviously helps. My D7k was a champ at night photography like that. Need to give my D700 a chance at it now...
On the people shots... Do you try to adjust WB in camera? I find it easier to just shoot RAW, auto WB, and then adjust in post. It was really tough for me to adjust in camera and then I'd spend too much time fumbling around with camera settings rather than shooting the moment.
Yeah, I was thinking that too (about the High ISO Noise - I was instructed to turn it off NR though, as it might remove some of the stars). I'm going to try and give it another shot this weekend.
As far as the people go, yeah... I just set the WB to Sunny/Shade/whatever... I don't constantly adjust usually. I had just been shooting in JPG, but I recently switched to both. I've never messed much with Post-Processing, so it's another new thing for me. Will take some learning. My computer is currently setup running Ubuntu exclusively, so I'm stuck with GIMP (not bad, but not the greatest)... I need to set it up to dual boot with Windows as well, so that I can use the copy of CS4 that I have - although I've heard great things about Lightroom. Either way, need to get Windows back on here.

"Up the Hill" - The is the Men's Pro 1 Criterium Race at the 2012 Tulsa Tough event. For any cycling people out here, this is the infamous "Cry Baby Hill." Cross-processing enhancement added to this shot.
"I'm in Charge Here" - Another shot from Cry Baby Hill. This guy was hilarious.

Outstanding work here. Frankly, I'm a little intimidated and have been slow to contribute based on the quality in this thread. Still, I picked up an old DSLR recently and checked out the Chihuly installation at the Dallas Arboretum. I don't know the shaggy art snob opinion on Chihuly but I loved it and hope to return at night to see it all lit up.
